Stuffed Mini Peppers
+1 Can of albacore tuna
+1/2 medium sized avocado
+ ¼ Lemon Juice
+1 Tbsp Olive Oil
+Cracked black Pepper
+Salt to taste
Drain the tuna from can and throw into a medium sized bowl.
Add carved out avocado, freshly squeezed lemon juice, olive oil, lightly cracked black pepper on top, salt (optional), and a few dashes of Cheyenne Pepper into the bowl.
Then use a fork to mash it all together.
Gut out the mini peppers and slice them in half, longways.
Finely chop the green onions.
Fill the halved mini peppers with the tuna mix, sprinkle the green onion on top, and add a touch of black pepper.
